Taco Casserole All the delicious flavors of Ground Beef Tacos in one Filled Layered Casserole!It is sure to be the new staple dinner recipe!
* Ingredients :
° 1 tsp oil olive
° 1 1/4 cup chopped red onion or yellow onion
° 1 1/4 cup chopped red pepper
° 1 1/4 lbs. Low fat minced beef
° Salt and freshly ground black pepper
° 1 tablespoon minced garlic
° 2 tablespoons hot pepper powder*
° 1 1/2 teaspoons ground cumin
° 1 can (14.5 oz) can black beans, drained and rinsed
° 1 (14.5 ounce) can diced roasted tomatoes
° 1 cup frozen corn
° 1/4 c water or broth chicken
° 1 1/2 tablespoons lemon juice, plus lemon slices, for serving
° 1/2 cup chopped coriander
° 2 c cheddar cheese**
° 2 c grated Monterey cheese Jack
° 15 (6-inch) tortillas corn , halved
° Taco add-ons (optional, see notes)
* Directions :
Preheat oven 375 degrees. Spraying 13" 9" baking dish with non-stick cook spray.
Heat oil in 12-inch non-stick skillet on medium-high heat. Add onion and pepper, and saute for 4 minutes. Run quickly to the far side.
Crumble in beef & season with pepper & salt Brown on the bottom, then chop the beef and continue to cook until browned. Fat drain.
Adding garlic, powder chili & cumin & cook about 1 min.
Add black beans, tomatoes, corn, water, lemon juice and cilantro and remove from heat.
To assemble the casserole, place 10 tortilla halves along the bottom of a baking dish, covering the entire surface of the bottom as best as possible.
Pour and brush one-third of the beef mixture over the tortilla layer.
Mix the cheese together and spread a third of the cheese mixture over the beef layer.
Repeat this process with the tortillas and beef and cheese filling two more times.
Baking in preheat oven about 20 min .
We finish with optional toppings and then cut into strips. Serve warm with lemon wedges if desired.
